I would like to take a leeeettle bit of credit for these, simply because this is the lovechild of 3 recipes, two from Oh She Glows and the other from Hell Yeah It's Vegan! And I just happen to be the one with a sweet potato and a weird craving for Fall-ish foods. These muffins taste like cannndy. If you still can't get your siblings, parents, children, or whoever to eat sweet potato casserole (no matter how sweet it is), you can surely convince them with these.

Ingredients
1 cup pureed sweet potato (from 1 medium potato)
1/2 cup almond milk
2 tbs ground flax + 6 tbs warm water (let sit for 5 minutes)
1/2 cup maple syrup
1/4 cup coconut oil
1 tsp vanilla
1 3/4 cup whole wheat flour
2 tbs wheat germ
1 tsp baking soda
1 tsp cinnamon
1/8 tsp nutmeg
1/4 tsp ginger
1/3 c chopped pecans (and/or walnuts)
1/4 c packed brown sugar
2 tbs whole wheat flour
2 tbs vegan butter (Earth Balance)
**I will be the first to admit these are not the healthiest muffins. However they are very filling so you may be able to stop at just one. You could also try substituting half the coconut oil for applesauce (can't guarantee the results...) and/or cut the crumble mix in half...I definitely loaded that stuff on.
