This dip is in a class of its own. The unique blend of flavors are a great accompaniment to veggies, pita chips/bread, or whatever your heart desires. It has a nice saltiness from the miso and a refreshing flavor from the cilantro and lime.
This will definitely be my go to snack all week. So convenient!
Edamame Cilantro Dip
Ingredients
500 g frozen, shelled edamame (the approx equivalent of 1 bag)
2 tbs barley miso paste (I used soybean and barley paste so my dip may be a little darker in color than yours)
juice of 1 lime or 3 key limes
1 clove garlic, minced or crushed
1 cup loosely packed cilantro
1/4 cup olive oil (or more depending on your processor)
1/4 cup water (optional)
salt and pepper to taste
Directions
Pour edamame into a pot and add water until level with the beans. Boil for 4 minutes.
Serves 8.
