I personally despise cole slaw...I think it is one of the most disgusting side dishes (besides stuffing) known to man; but when I saw this recipe on another blog, I was drooooling. However it turns out that for my own personal use, I could not make this slaw the way it was originally done. I suggest you check out The Baking Barrister if you would like to see/make the original recipe which is more of a side on its own. My version would most likely be used to accompany/garnish tacos.
Although it isn't as glorious, the taste and colors are still fantastic. This would be great as a light refreshing accompaniment to other glorious vegan main dishes (as you will see probably next week).
Sesame Lime Slaw
1 cup green cabbage, thinly sliced
3/4 cup red cabbage, thinly sliced
1/2 cup carrots, thinly sliced...shredded would work too
1/2 cup cilantro, roughly chopped (I didn't have it on hand but I suggest you add it!)
juice of 1 lime
1 tsp freshly grated ginger (or 1/2 tsp ground ginger if you must)
2 tsp toasted sesame oil
dash of sea salt
sesame seeds (approx 1 tbs if you want to get technical)
Directions
Prep all of the veggies and mix together. I gave them a nice rough chop once combined to make it less awkward to eat but this is not a necessary step!
Mix lime juice, ginger, oil, and salt in a separate bowl. Combine veggies and dressing until evenly coated.
Then add as many sesame seeds as desired and toss to combine. Enjoy!
