Annnd these two individuals made a great choice! This recipe was totally off the top of my head and it worked beautifully! Just be warned, it is high in saturated fat, because coconut naturally is. However, let me remind you that the fat in coconut is used in the body differently than saturated fat you get from meat and cheese. Splurge a little dearies!
Coconut French Toast
1/4 cup + 4 tsp flax meal + 3/4 cup warm water (set aside 5 min)
1 cup coconut milk (full fat; make sure all cream on top is used up before adding thinner liquid)
juice from 1 lemon
1/2 cup nondairy milk, unsweetened
2 tsp sugar
1/2 tsp cinnamon
8 large, thin slices of day-old italian bread
1 cup shredded coconut, unsweetened
In a large, wide bowl, mix together coconut milk, lemon juice, nondairy milk, sugar, cinnamon, and flax egg mixture. On a paper plate, finely crumble the shredded coconut.
Serves 4.
