I've been meaning to share this recipe for a while, so I better finally share it before grilling season's over!
Loaded Portabellas
3 tbs olive oil
6 oz soy sausage (I used Gimme Lean brand)
1/2 small sweet onion, finely chopped
1 clove garlic, finely chopped
pinch of red chile flakes
1/4 cup dry red wine
6 oz fresh spinach
1 tbs fresh chopped basil
1 tbs chopped flat-leaf parsley
1/2 cup vegan mozzerella (I used Daiya shreds)
2 large portabellas, stems removed
2-4 tomato slices
salt and pepper
Heat 1 tbs oil in a saute pan over high heat. Add in the sausage and break into small pieces with a wooden spoon. Cook until golden brown, about 5 minutes.
Serves 2.
Note: This meal is high in sodium because of the vegan cheese and sausage...that is why I don't often use fake meats/cheeses and I would caution you in consuming much of these products. That said, they are a fantastic, tasty, convenient treat!
