They may be called muffin tops, but they certainly won't give you one because they are suprisingly healthy: no refined sugar, whole wheat flour, plenty of apples, practically no saturated fat, and no cholesterol. Woooot : )
These are super tasty, so please enjoy!
Apple Pie Muffin Tops
2 Granny Smith apples, peeled (1 chopped, 1 grated)
1/4 cup pure maple syrup
1 tbs fresh lemon juice
1 + 1/4 cup spelt flour (or whole wheat)
1 cup rolled oats
1/4 cup lightly packed brown sugar
1/2 cup chopped walnuts (optional)
1/2 tsp sea salt
1/2 tsp baking powder
2 teaspoons ground cinnamon
Pinch of nutmeg
1 tbsp ground flax + 3 tbsp water, set aside 5 minutes
1 tsp pure vanilla extract
1/4 cup almond milk
1/3 cup unsweetened applesauce
Preheat the oven to 350F. Prepare the flax egg and set aside. Mix apples, maple syrup, and lemon juice in a small saucepan over medium-low heat. Heat for 5-10 minutes, stirring occasionally to make sure it doesn't burn.
