These aren't the prettiest things...but they sure are tasty! I should have followed the recipe's advice and added some water..my dates were dried out :( But it didn't affect the flavor!! If you want them to stick together better than mine...you may want to add water.
Apricot Energy Squares
Makes 9 servings
Prep Time: 5 minutes
1/2 cup dried apricots
1 tbs lemon zest
1 cup pitted medjool dates
1/2 cup raw cashews
2 tbs almond butter (I'm in love with crunchy Barney Butter)
1/2 tsp salt
1. Put all ingredients in a food processor and process until everything is well-incorporated. It will not be perfectly smooth, but if your dates or apricots are overly dry, you may want to add a tablespoon of water to the mix.
2. Press mixture into a small square pan and cut into 9 pieces. Enjoy!
