Blackberry Brownies

These are not your typical brownies.  First of all, they're vegan.  Second, they are more moist, a bit lighter, and filled with blackberries!

The chocolate flavor isn't overpowering so if you want oodles of chocolate-y goodness, I suggest you add some vegan chocolate chips.

I find these are best served warm with some blackberry-banana soft serve (handful frozen blackberries + 1 frozen banana processed with 1 tbs almond milk until smooth).

Blackberry Brownies

Ingredients

1/2 cup applesauce
1/4 cup canola oil
1/2 cup agave nectar
1 tbs vanilla
1 1/4 tsp baking powder
1/8 tsp baking soda
1/4 cup cocoa powder
3/4 cup spelt flour (or whole wheat)
1/2 - 1 cup fresh or frozen blackberries

Directions


Preheat oven to 325F.  Combine applesauce, oil, agave, and vanilla.

Add baking powder, soda, and cocoa powder and mix.  Stir in spelt flour until combined.  Fold in desired amount of blackberries.

Bake for 20-24 minutes if using a greased 8x8 pan, or 26-30 minutes if using 2 small parment-lined + greased loaf pans.  A toothpick entered into the center should come out clean.

Let cool for 15 minutes. Enjoy! Serves 8.
