I hope this shows you how versatile this recipe is, and allows you to create your ideal bar : )
Dark Chocolate Cranberry-Almond Granola Bars
1 cup rolled oats
1/4 cup slightly crushed almonds
1 tbs flaxseeds
1 cup unsweetened puff cereal (I use brown rice puffs)
1/2 cup dried cranberries
1/2 cup dark chocolate mini chunks
1/4 cup almond butter
1/4 brown rice syrup (Eureka, I found it!)
1/2 tsp almond extract
dash of salt
Preheat the oven to 350F. Combine almonds, sunflower seeds, oats, and flax seeds and spread over a parchment-covered baking sheet. Toast for 10 minutes, mixing them at the 5-minute mark. While you're waiting, combine rice syrup, almond butter, and almond extract until smooth.
Immediately transfer to a bowl with puff cereal, chocolate, salt (if desired) and cranberries. Stir until chocolate has partially melted and covered all other ingredients.
I have found freezing bars in individual baggies to be the best storing method. They "thaw" pretty quickly and last longer that way!
