I can sense my family becoming more open to vegan food by the day and it is so exciting! Part of this is due to the improvements in meat substitutes and other vegan products. The other is the fact that there are so many tasty vegan recipes out there!
Sunday's meal was well-received. Everyone raved about the Trader Joe's Japanese Style Fried Rice. They also enjoyed the Gardein Mandarin Orange Crispy Chick'n stir fried with snap peas from our garden, red bell pepper, and broccoli.
Yesterday I made OSG's Thai Sweet Potato Chickpea Burgers with Spicy Peanut Sauce. We broke them up and stuffed them in whole wheat pitas with fresh lettuce from the garden, tomato, and avocado. [Pictured below.] This is a pretty simple recipe that the family enjoyed and I would definitely make again. What you can't see is the Eat Smart Sweet Kale Vegetable salad. I love this salad kit because it's a great mix of crunchy, nutrient-dense leafy greens and cruciferous veggies. Not to mention the tasty pepitas and dried cranberries! Instead of the included dressing, which is not vegan, we used low-fat balsamic or Panera's fat-free raspberry dressing. You can find this kit at Costco.
