Here's the run down of my meals and physical activity today:
9:00am 32oz water
Walk 0.8-mile loop around the neighborhood
10:00am Body weight resistance training workout
Vegan Mocha Performance Protein with unsweetened almond milk
10:45am 2-mile walk with the pups
11:30am Green Smoothie
1:00pm Vanilla Peach Rice Pudding [recipe after the break!]
3:00pm Helped Mama unload a bunch of gravel to our garden
4:00pm Gingerberry Kombucha while cooking dinner
6:00pm Mixed greens with tabbouleh, falafel, and tzatziki sauce
9:00pm Medjool date "frappuccino"
I drink plenty more water throughout the day as well...I probably drink about 80 ounces a day.
We had a nice Mediterranean spread for dinner tonight, full of herbs and greens from our garden. I have made this meal before and linked the blog post with a few of the recipes above (and here). Rice pudding recipe below!
Vanilla Peach Rice Pudding
Serves one.
1 1/3 cup water
2/3 cup vanilla almond milk
1 peach, cut into chunks
1/2 tsp vanilla extract
1. Soak your rice for an hour or so before cooking.
2. Drain your rice. Transfer to a pot and bring rice and 1 1/3 cup water to a boil. Reduce to a simmer, cover the pot, and let cook for 15 minutes, or until all of the water is absorbed.
3. While that is cooking, cut up your peach and transfer to a bowl. Combine with almond milk and vanilla.
4. Once the rice is done, add it to your bowl and mix everything together. Enjoy warm immediately or chill in the refrigerator until you are ready!
