7:00am Drink 32oz of water
Walk a quick 0.8 mile-loop around the neighborhood to wake up
8:00am Green Smoothie (recipe featured soon!!)
8:30am Walk around farmer's market
Starbucks Grande Iced Coffee w/ Soy, unsweetened
Safeway "Energy" bagel w/ almond butter
10:30am 2-mile hike with the bestie in Red Rocks Park
1:30pm Peanut Chocolate Chip ProBar
Sunbathe
4:30pm Snack on baby carrots while prepping dinner
6:30pm Chipotle Zucchini Lentil Burger (2 patties) with a baked sweet potato, Gingerberry Kombucha
7:30pm Walk the pups 1.5 miles with the bestie
9:30pm Chocolate Peanut Butter Banana Milkshake [recipe after the break!]
I wasn't home for most of the day, but my family had Puffy Pillow Pancakes from Isa Chandra's Post Punk Kitchen blog for breakfast. My brothers left shortly thereafter, so I'm not sure what else they have had today, but my parents snacked on Mary's crackers and hummus, chips and salsa, and lightly sweetened iced tea. My bestie and my parents had the same burgers from Isa Chandra's Appetite for Reduction (recipe here) topped with Chao Tomato Cayenne vegan cheese, condiments, avocado, tomato, and whole wheat buns. I also made oven fries from red potatoes tossed in truffle-infused olive oil, salt and pepper, and parsley. The verdict? They loved it!
I also got my parents hooked on So Delicious Cashew Milk Ice Cream, muahaha :) My dessert is featured below!
Chocolate PB Banana Shake
Serves 1.
2-3 medjool dates, pitted
1 heaping TBS of raw cacao powder
1 tbs peanut butter (or my personal fave - Almond Barney Butter)
**for lower fat content, you can use 2 TBS PB2 powder
1/2 cup unsweetened almond milk
ice
1. Toss all ingredients (except ice) into blender and blend until smooth.
2. Add as much ice as needed to reach desired consistency (I use as much as it takes to fill my single-serve Ninja blender cup to the "max fill" line -- maybe 1 cup?)
3. Blend until smooth and enjoy!
