I really don't have much else to say; just trust that you need to try it ;)
Grilled Mango, Avocado, and Black Bean Salad
Prep time: 6 to 8 hours (optional)
Active Prep/Cook Time: 20 minutes
1 mango, peeled and pit removed
1 avocado, halved
3/4 cup dried black beans ( or 1 15-oz can black beans, rinsed and drained)
1 tbs lemon juice
1/2 tbs Bee Free Honee
1/2 tsp chili powder
1/2 tsp salt
Optional step: Six to eight hours before you want to make the dish, soak dried black beans in water.
1. [Optional] Drain and rinse beans and transfer to a pot. Add 3 cups of water to the pot and bring to a boil. Reduce to a simmer, cover, and cook 45 minutes or until beans are tender.
2. Grill half the avocado and all of the mango for 4-5 minutes or until charred.
3. Mash remaining avocado with lemon juice, honee, chili powder and salt.
4. Dice grilled mango and avocado. Combine with black beans and avocado dressing and serve at room temperature or chilled. Enjoy!
