If we're facebook friends, you may have seen that I finally made my mom vegan food that she thoroughly enjoyed! This is groundbreaking. So I had to share this life changing recipe with you.
Best Ever Vegan Zucchini Bread
6 tbsp ground flax seeds plus ½ c + 1 tbsp warm water
1 cup canola oil (or replace with applesauce...or do 1/2 and 1/2)
2 cups turbinado sugar
1 tsp vanilla
2½ cups grated zucchini, packed
2 cups all-purpose flour
1 cups whole wheat flour
1 tsp salt
1 tbsp baking soda
1 tsp baking powder
1 tbsp cinnamon
2 tsp nutmeg
Preheat the oven to 350F. Combine oil (and/or applesauce), sugar, flax egg, and vanilla. Stir in zucchini. Add baking powder, soda, salt, cinnamon, and nutmeg and mix until combined. Add in flour until all is evenly incorporated. Grease two loaf pans (regular- not mini-sized). Pour the batter between the two pans and bake for 45-50 minutes or until a toothpick inserted comes out clean.
Let cool at least 15 minutes and enjoy! Serves 24.
