The sweet blend of fall spices, molasses, and orange zest are perfection. These are also some of the healthiest [legit] cookies I know of. They stay nice and soft for up to a week in an airtight container too! (Not like they will last that long...lol)

Orange Spice Molasses Cookies
Dough:
1 1/2 cups rolled oats
5 tbs earth balance
1/3 cup brown sugar
1/3 cup sugar
2 tbs orange zest
1/2 cup blackstrap molasses
7 tbs unsweetened applesauce
1 tbs nondairy milk
1 tsp vanilla
1 tsp baking soda
1 1/2 tsp cinnamon
1 1/2 tsp ground ginger
1/2 tsp cloves
1/4 tsp allspice
dash of black pepper
pinch of sea salt
2 1/4 cups whole wheat flour
Orange Sugar coating:
1/2 cup sugar
1 tbs orange zest
1. Preheat oven to 375F. Process oats into a flour and set aside.
2. Cream together butter and sugars. Add in zest, molasses, applesauce, milk, and vanilla.
3. Mix in baking soda, cinnamon, ginger, cloves, allspice, salt, and pepper.
4. Combine with oat flour, then mix in whole wheat flour until well-combined.
5. Combine sugar and zest for cookie coating. Roll dough into walnut sized balls and coat in orange sugar. Space 2 inches apart on a parchment-lined baking sheet.
6. Bake for 8-10 minutes. Let cool 5 minutes before eating.
