Holiday Salad with Cranberry Orange Vinaigrette - Oh She Glows
I used a mixed green salad and topped it with thinly sliced green apple, dried cranberries, and walnuts (and almonds thanks to my dad...I don't recommend this). The dressing was fresh and tart (I would add an extra tbs of maple syrup next time to take a bit of the edge off) and everyone greatly enjoyed this as a starter.
Ultimate Vegan Lentil Walnut Loaf - Oh She Glows
This was super easy to put together and incredibly tasty! I think even non-vegans would approve. Since I made a half batch, I omitted the apple and doubled the carrot. Other than that, I stuck to the exact recipe and it turned out beautifully.
This Ain't Grandma's Sweet Potato Casserole - Oh She Glows
This recipe was a total crowd-pleaser! It was sweet, but not sickening-ly so... I didn't add pecans since there were nuts in so many other components of the meal. Follow the recipe exactly and you're sure to have a hit!
Fluffy White Dinner Rolls - Oh She Glows
These didn't exactly turn out as I had hoped. Maybe it was the fact that they sat out to rise for 4 hours total, or that the dough seemed too wet so I added extra flour, but I wouldn't call my attempt "fluffy". Not sure they're worth giving another shot when I know of a better holiday bread recipe (which I will share with you all soon).
Roasted Brussels Sprouts with Sherry-Mustard Vinaigrette - What Would Cathy Eat?
These were faaannntastic. The vinagrette thickened up nicely to coat the brussels sprouts, and the sprouts were sooo tender and perfectly roasted. New favorite brussels sprouts recipe? I think so.
(Although I am aware this is not the most glorious picture...)
Hope you enjoyed : )
