Since I've gotten a bit more comfortable with the Thrive recipes, I have experimented a bit with similar energy bar and smoothie recipes so I can share them with all of you! I must say they both turned out very tasty!
Oatmeal Raisin Energy Bars
1/4 cup toasted steel cut oat flour (you can use a coffee grinder to turn oats to flour)
heaping 1/2 cup soaked raisins
1/2 cup pecans
1/4 cup popped amaranth
1/4 cup flax meal
3 medjool dates, roughly chopped
1 tsp cinnamon
sea salt
Toss everything in a food processor and pulse until well-combined. Press into a small square pan and refrigerate for 1 hour. Cut into 8 bars and store in the fridge or freezer.
Orange Pumpkin Smoothie
3 tbs pepitas (hulled pumpkin seeds), ground
1 medjool date, chopped
2 tbs pumpkin puree
2 frozen bananas
1/2 cup orange juice (add more to reach desired consistency)
2 tbs hemp protein
1/4 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp vanilla extract
Blend/process and serve. Enjoy!
