Adapted from Oh She Glows
2 tbs flax meal + 6 tbs warm water, whisked and set aside for 5 minutes (replaces 2 eggs)
1 tsp vanilla extract
1/2 cup agave nectar
1/4 cup coconut oil
1 cup mashed (very ripe) bananas
1/2 cup almond milk (or other non-dairy milk)
1 3/4 cup whole-wheat flour
2 tbs wheat germ (if you dont have this, chia seeds or ground flax may work)
1 tsp cinnamon
pinch of nutmeg
1 tsp baking soda
1/4 cup coconut butter (processed coconut meat)
1 tbs agave nectar or maple syrup
1 heaping tbs peanut butter
1 small ripe banana, mashed
Preheat oven to 325F.
Whisk flour, wheat germ, cinnamon, nutmeg, and baking soda in a small bowl. In a large bowl, mix top six "wet" ingredients together. Fold dry ingredients into the wet ingredients until just combined.
Bake for 18-20 minutes.
