The recipe makes a huge amount of bread...so you may want to cut the recipe in half if you're not giving any of it away.
Pumpkin Bread

Serves 36
2 cups all purpose flour
1 1/2 cups whole grain spelt flour
2 cups sugar
1 1/2 cups powdered sugar
1 1/2 tbs cinnamon
1 1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp allspice
2 tsp baking soda
1 1/2 tsp salt
1 cup unsweetened applesauce
2 cups pumpkin puree
1 cup almond milk
1 tsp apple cider vinegar
2 tbs flax meal
1/2 cup canola oil
1 tbs vanilla
Preheat your oven to 350F. Whisk together almond milk, flax, and vinegar and set aside for a few minutes. Combine all ingredients thoroughly in a large bowl. Divide between 2 large (9x5) greased loaf pans or 4 small greased loaf pans. Bake for 1 hour or until a toothpick inserted into the center of the loaf comes out clean. Let cool completely before slicing. Enjoy!
