That's all, just thought I'd share this simple and delish creation :)
Roasted Red Bell Pepper and Avocado Hummus
2 cups cooked chickpeas and/or lentils, rinsed
1 whole roasted red bell pepper (rinse if using jarred)
1/2 a ripe avocado, thinly sliced
juice of 1/2 a lemon
2 tbs tahini
2 tsp minced garlic
salt and pepper to taste
Blend all ingredients in a food processor until smooth and fluffy. Add small amount of water if necessary.
Serve with veggies, pita, or chips. Enjoy!
