Sesame Orange Seitan and Kale
2/3 cups seitan strips (I used West Soy brand)
Sesame Orange marinade (below)
2 cups kale (approx 1/2 a head)
Sesame Orange dressing (below)
Olive oil
2 carrots
1 bell pepper (red, orange, or yellow)
Any other veggies you desire (broccoli, snap peas, etc)
1 tsp sesame seeds
Marinade:
(Adapted from Veganize This! by Jen Shagrin)
1 tbs spicy mustard (or dijon)
juice from 1 orange
zest from 1 orange
1 tbs agave
3/4 tsp sesame oil
1/4 tsp fresh ground pepper
Dressing:
(Adapted from Appetite for Reduction by Isa Chandra Moskowitz)
juice from 1 orange
1 1/2 tsp red wine vinegar
3/4 tsp sesame oil
1/4 tsp sriracha or other hot sauce
1/4 tsp microplaned ginger
1. Mix together all marinade ingredients and dump over the seitan. Let the seitan marinade for 30 minutes to overnight in the fridge.
3. Heat approx 1 tbs olive oil in a skillet over medium high heat. Toss seitan (with marinade liquid) and veggies in the skillet and cook until seitan is slightly seared, approx 4-5 minutes.
