What's not to like?!
I know I've been on a dinner streak lately...but I promise baked goods are coming soon! And as always, please feel free to give me any feedback/make requests!
...Now go make this:
Vegan Club Sandwich
Total prep/cook time: 15 min
3 pieces of bread
olive oil
3oz extra firm, pressed tofu (1/4 of a block), cut into 6 thin slices
2 strips tempeh bacon
1 slice tofutti white "cheese"
1/4 avocado, sliced
2 tbs prepared chipotle cream or vegenaise
tomato slices
red leaf lettuce
1. Heat a skillet over medium high heat and and spray with a bit of olive oil/cooking spray. Cook tofu and tempeh until they look like the picture below (tofu: golden brown and tempeh: slightly blackened) on both sides.
Stack sandwich from bottom to top in this order:

3 pieces tofu
1 strip tempeh, cut in half
tomato slices
half of avocado slices
red leaf lettuce
tofutti "cheese" slice
bread
3 slices tofu
1 strip tempeh, cut in half
tomato slices
half of avocado slices
red leaf lettuce
