Snickerdoodles
Ingredients
1/2 tbs flax meal +1 1/2 tbs warm water, set aside for 5 min
1/2 tsp vanilla
1/4 cup earth balance vegan butter
1/3 cup + 1 tbs sugar
2/3 cup pastry flour
1/3 cup whole wheat flour
1/4 tsp cream of tartar
1/2 tsp baking soda
dash of cinnamon
Cinnamon sugar (1 tbs sugar + 1 tsp cinnamon)
Directions
Preheat oven to 375F. Mix flax egg and set aside. Cream together butter, sugar, and vanilla. Add flax egg and mix until smooth. Mix in cream of tartar, baking soda, and cinnamon. Add flour and mix until combined. The dough will be thick/firm, but don't fret, it produces super soft cookies!
