Apricot-Almond Energy Bars
Ingredients
1 cup rolled oats
1/4 cup raw slivered almonds (I used whole almonds and crushed them using a dough cutter)
1/4 cup raw sunflower seeds
1 tbs flaxseeds (whole)
1 cup unsweetened puffed cereal
1 cup dried apricots, chopped (you may substitute part of this for the dried fruit of you choice: raisins, currants, cranberries, etc)
1/4 cup creamy almond butter (I used Maple Cinnamon Almond Butter)
1/4 cup brown rice syrup or honey (honey is technically not vegan but I used it since I could not find brown rice syrup)
1/4 cup turbinado sugar*
1/2 tsp almond extract
dash of salt
*Note: I found the sweetness to be a bit overpowering and I would suggest omitting the sugar, this also saves you 22 calories per bar.
