Sometimes I just can't pass up a good deal at Sunflower Farmers Market. Asparagus was on sale and I have had this recipe on the back of my mind since I first made it the summer but the meal as a whole flopped. This time I left the recipe well enough alone and loved it! It is a great, elegant alternative to leafy green salads. It could almost pass as an entree but I would reccomend at least serving this with a whole grain for more protein and fiber. Enjoy!
I feel like vegan bloggers tend to stray away from salads because some readers, especially those who eat meat, think salad is all vegans can eat. So not true! I wanted to share this recipe because it is simply phenomenal, and the "taco meat" is better than the real stuff in my opinion. This is yet another perfect OSG recipe, but I'll let you decide for yourself.

Aaaanyways, it may be a little higher in calories, but this is a well balanced meal overflowing with healthy fats and packing 100% of you daily fiber needs.
