These are far from traditional pancakes. Chock-full of health/vitality-boosting nutrients rather than empty carbs, they will keep you full and energized for hours. I would never try to act like these taste as divine as fluffy, white pancakes slathered in butter and syrup, however they are a great healthy alternative.
And may I please digress for a second and say, look how freaking awesome the view is from my living room!! Not to mention hidden behind those trees is a running/biking trail and a huge building with ice rinks (helloooo hockey!) and [lap] swimming pools. I love Colorado. And my apartment.
Also, it is freezing outside. I'm supposed to run a 5k tomorrow morning, and coincidentally, it is supposed to snow tonight and tomorrow morning. What luck. My lungs are going to hate me.
Anyone else dealing with finals right now? Probably most of you if you're in school...
Well I would urge you to take a break and treat yourself. Breakfast for dinner anyone? These pancakes are fantastic no matter what time of day it is. You really cant so wrong with peanut butter, banana, and chocolate. Oh baby.

It feels like an eternity since my last post, but then again it's been a marathon of a week...and it's not done yet! I'm at mile 22ish...I still have considerable research to do and then the actual writing for a 5 page paper about Stress and CVD due tomorrow and right after I turn that in I will complete 2 hours of Stats homework. Oh the joys of being a college student. If I'm at mile 22 now...just imagine what I have been dealing with all week.
Anywho, I just wanted to update you all to let you know that I'm still here and you now have the option to subscribe to my blog via email! This is my preference (versus RSS feed) because it's less confusing. Pluuus this doesn't bombard you with junk, it simply alerts you when I have a new post. That way you don't have to check back every day (this gets tedious if you enjoy a considerable number of food blogs like I do...) This feature is up and to your right.
Speaking of things on the right sidebar of my blog...I found it just a bit curious that while I'm getting the same number of views, my poll went from getting 8 votes last week to 3 this week. Has anyone tried to vote and had it rejected with a message such as "you have already voted" even though you have not? I'm curious...I may have designed this one wrong.
Now let me explain the heading: the "winning" recipe from the poll this week was Mexican Hot Chocolate Snickerdoodles, which have a nice kick to them, and I was inspired tonight to make Vegan Jalapeno Poppers in the near future. Sooo hopefully you like spicy and you can look forward to that!
