This "salad" is to die for. With the perfect mix of sweet and savory and a fabulous nutritional profile, there is no reason not to enjoy this atop a whole grain (brown rice, wheat berries, quinoa, etc) or with a vegan burger! Plus it is just another perfect, quick summer meal...

I keep all interesting recipes I find in the blogosphere "neatly" organized in Word documents that have an alphabetized index and internal links (yeah, I can pretend I'm tech saavy). Whatever strikes my fancy that week (slash whatever I have in the pantry + the "Find" application in Word) usually ends up Oooohhhh baby. These are the most fantastic way to celebrate the beginning of summer. I had been eyeing this recipe from Annie's Eats for a while but just now finally got to make it...and it didn't disappoint! My brother even said I should make them again (which is suuuuper high praise from my family!). I know it may look like this isn't a full meal, but it has incredible staying power. I won't lie...this isn't terribly healthy, so try to be good the rest of the day ;)
Can't say they make great stand-alone leftovers, but toss a couple in your favorite soup (maybe tomato basil) and you have yourself a tasty meal! Also, apparently I'm so out of practice with my normal blogging that I forgot to take any pictures of the process! It probably would have helped with this recipe, but if I make them again I promise to post those :) Phew! It's over. I thought it would never end.
Hope you are all doing well as your school year ends or that you're just doing well in general! Before I'm gone all summer (more explanation later), I'll be cranking out the recipes to try and keep some coming over June and July. I'm leaving May 28th so that gives me a decent amount of time...the wheels are turning ;) annnd the breakfast picture sucks so here's a picture of Brasse to hopefully make up for it. Of course this turned out blurry too...sorry! :) Schoooooool's out...for...summer! Or in my case...until Summer or Fall of 2013 when I start my Master's! In case you care, I got an A in both sections of Anatomy and Physiology and I am THRILLED. It was tough but sooo worth it :)
So in the next few days I'll be posting oodles of recipes, and that includes ending this craptacular meal plan and moving on to some really. great. stuff. So pumped. |
