Please bare with me as I transition back to this wonderful world of food blogging. I am currently juggling three jobs so my priorities tend to lean toward food that is fast, filling, convenient, and healthy. These energy squares are a great example...When I'm leaving my first job at 3:30pm and heading to my second which runs from 4-8pm these will be a great, filling, energizing option to tide me over until I get off work :) In the near future you'll probably be seeing a whole lot of "quickie" recipes that produce great leftovers rather than extravagant, time-consuming fare. But heck, I'm sure you're all busy too, so this should be great for the both of us ;)

These are far from traditional pancakes. Chock-full of health/vitality-boosting nutrients rather than empty carbs, they will keep you full and energized for hours. I would never try to act like these taste as divine as fluffy, white pancakes slathered in butter and syrup, however they are a great healthy alternative. And may I please digress for a second and say, look how freaking awesome the view is from my living room!! Not to mention hidden behind those trees is a running/biking trail and a huge building with ice rinks (helloooo hockey!) and [lap] swimming pools. I love Colorado. And my apartment.
Also, it is freezing outside. I'm supposed to run a 5k tomorrow morning, and coincidentally, it is supposed to snow tonight and tomorrow morning. What luck. My lungs are going to hate me. ...I still love Colorado. Is it really that time of year again?! ...What time of year you ask? Valentine's Day. I don't know how you feel about this holiday...but it is not my fave. Of course I have not had the opportunity to celebrate with a significant other, and maybe that would change my mind, but I see it as a Hallmark holiday and a ridiculous reason for guys to spend too much money showering their ladies with gifts. And ah...the mushiness of it all...no thanks.
Annnywho, just because I prefer Christmas, Easter, Halloween, Thanksgiving, or basically any other holiday than this one, doesn't mean I won't bake for the occasion! And the timing was so perfect because I was asked to bake the cakes for my dear friend Lillian's Bridal Shower. I happily obliged with the condition that one of the cakes could be vegan. Of course I have no cake decorating experience....but why let that stop me?! It was a great success and I am excited to hopefully share pictures of those cakes once they are posted (if I'm lucky). Back on topic...golly jane. These cupcakes are made up of all the same components as the vegan bridal shower cake, minus the fondant. If you would like that recipe too, please let me know! The best thing about this recipe is that almost all of the ingredients are used in non-vegan baking! The only things which are vegan subs are earth balance and a splash of non-dairy milk, which you can purchase at practically any grocery store! Perf. Well, I think that's enough talk...on to the romantic sweets! Well hellooooo!
Long time no talk! I am so terribly sorry. As usual, I made two failed attempts at a vegan cheesecake bar...don't ask me what went wrong; I have no clue. They just don't compare to dairy-based cheesecake. And that just won't do. And theeennn I got a terrible, horrible, no good, very bad case of bronchitis. Ten days of painful, hacking coughing...lightheadedness...and shortness or breath so bad they should have stuck me in pulmonary rehab. But I'm all better now other than the occasional bark! And to celebrate I would like to share with you a recipe I have made multiple times, but just recently veganized. These cookies are a little twist on regular snickerdoodles (find that recipe here!). They are less sweet and more rich and creamy. This particular batch tastes a bit graham cracker-y in flavor...but I think that is just because of the almond butter I used, which has a distinct flavor. If you are willing to do the extra work, I would recommend using maple cinnamon almond butter! I just had a fresh cookie with some Silk Nog and it was a divine combination. Yes indeed, 'tis the season dearies! PS: Pleeease do me a favor and comment on this post, it will only take a second! This meal is incredible. With half your daily fiber needs, low fat and sodium, and a generous helping of protein, you can be sure this is a great addition to a healthy vegan diet (or any healthy diet!). I have been longing to make a dish like this since enjoying the fantastic Moroccan Chicken Salad (sans chicken and egg) at California Pizza Kitchen. After taking a looksie through The Kind Diet, I found a couscous dish with a few similar ingredients. To top it all off, I found the most beautiful organic butternut squash at Sunflower Farmers Market and knew I had to do it justice. I suppose this will do ; )
Sometimes I just can't pass up a good deal at Sunflower Farmers Market. Asparagus was on sale and I have had this recipe on the back of my mind since I first made it the summer but the meal as a whole flopped. This time I left the recipe well enough alone and loved it! It is a great, elegant alternative to leafy green salads. It could almost pass as an entree but I would reccomend at least serving this with a whole grain for more protein and fiber. Enjoy!
I am a horrible person. I have neglected this blog for over a week (!!) and yet I have gotten the most views ever in my absence (!!!). I promise I have wanted to post something...but I've had a few attempts that fell short recently... #1: Scarlett Orzo with Shaved Asparagus Salad --Orzo didn't fly with this recipe...I'm going to try it again with quinoa #2: Kale Salad with Lemon Tahini Dressing -- Didn't have all the veg I wanted to reeeally make it blog-worthy, but a good lunch nonetheless! #3: No-Bake Chocolate Torte -- According to my mom "not chocolatey enough"; and because I broke the news that it had avocado, everyone could taste it. Lame. I want to remake it and take that flavor down a notch, while enhancing the chocolate. Are you all interested in any of these? Is it worth putting them on here or should I move on? In the mean time..here's a sweet treat I've had up my sleeve for a while now. These chews can serve as a fantastic, filling snack or a nice sweet but light ending to a summer day : ) I'm not a huge chocolate fan, but when I do crave it, you can bet I'll be making these cookies! They have just the right amount of chocolate and an irresistable chewy texture. Plusss, these gems are gluten free!
I have a confession to make. If I could only read one food blog for the rest of my life...it would be Oh She Glows. Angela is so personable, has an effortless way with words, and a gift for baking (and cooking!). I think I have made more vegan recipes from her blog than any other blogs combined. I guess I can add this to my list! What food blog would you choose if you could only read one? I have wanted to put up this recipe ever since I dreamt it up about a week ago. I've had it at least four times since and I'm not tired of it yet! Today I added granola and banana soft serve to make a VOO Parfait, OSG-style. It was sooo fantastic and healthy and filling, this may never get old... For those of you that are new to overnight oats, they are oats and chia seeds soaked in almond (or other nondairy) milk overnight. By the morning the mixture has thickened up and viola, cold (but delicious) oatmeal! From that basic recipe you can incorporate so many add-ins: protein powder, sweeteners, nuts, nut butter, fruit, granola...the list goes on my friends. I hope you will give overnight oats a try, even if you aren't interested in my version. Breakfast is the most important meal of the day. It starts up your metabolism, and can set up what eating choices you're going to make for the rest of the day.
This breakfast is a particularly special treat. It has a delicious sweet/tart combination, plus fiber and protein to start you off right. Annnd being a college student that usually only fixes meals for herself, the individual size is so convenient! It could also be used as a summery dessert. Yummm. Oh the versatility... |
