I'm obsessed with many Asian things...Asian cars (Honda, Toyota), Asian dogs (Akitas), Asian countries (top of my list for international travel), Asian decor (cherry blossoms, bamboo), and of course...Asian food. I LOVE sushi!! Soooo so much. Now don't feel bad for me thinking I can't have it anymore...there are plenty of restaurants that will happily make me some loaded veggie sushi. PLUS, there's plenty more to be enjoyed when you go out for sushi! Miso soup...seaweed salad...edamame...and something like this:

I would love to catch you all up on my extravagant life (work, work, grad school apps, car troubles, and more work), but I will save that for a later date. We have more important things to address right now...

I'll be the first to admit I'm not the best at coming up with recipes off the top of my head...however I was recently inspired by the most decadent, easy to use, pre-marinated sprouted tofu by Wildwood. I am pretty proud of myself for coming up with such a healthful, simple, delicious, and easy-to-prepare meal!
If the mix of ingredients seems rather out of character for me...that may be because I recently read Thrive by Brendan Brazier. I was enthralled with the ideas he presented in the book and I have been experimenting with more Thrive-centric recipes. I am making a slow transition but I hope to kick it into full-gear once I've moved into my new apartment at the end of the month :) This recipe isn't exactly all that Thrive is about...but it employs a lot of the same nutritional values. So give it a try! Maybe you'll turn into a vegan athlete too! Before we delve into this new recipe, I would just like to share a couple links. This first one is inspiring and the second is just hilarious. I highly recommend subscribing to her channel :) One Man's Journey from "Average" to Plant-Based Marathoner My Drunk Kitchen...Vegan Edition Soooo while the above picture looks much better (as far as plating goes) in my opinion, the bottom one is a more realistic picture of what your tofu and veggies should look like in the final product. Word to the wise: follow this recipe EXACTLY if you want it to taste incredibly good rather than just okay. I can't even follow my own directions because I lost track of time in both attempts at this recipe and overcooked my udon noodles. Thus, they never browned and most of them stuck to the pan when I was tossing them in the sauce. Regardless of my incompetence...the subtly sweet and nutty flavors if the sauce are the perfect complement to the tofu, snap peas, and bell pepper in this recipe. Udon fail aside, I would make this again in a heart beat, and if you can follow directions, you will be singing its praises as well :)

Okay, okay...shameless plug over. This recipe is spectacular for sooo many reasons; but I'll keep it to three: it is high in protein, it is super quick and easy to make, and it is deeelicious! I was pleasantly surprised when I discovered the ease with which this meal came together, the flexibility it allowed for personal preference, and the fact that it is packed with plant protein. As an added bonus it tastes like take-out! Amazing. I think this would also be a great "starter" recipe for people curious about trying a vegan diet. The only thing I can suggest to enhance the nutritional value even more would be to use higher-fiber udon noodles (maybe made from brown rice...mine only had 2g per serving) and low-sodium soy sauce, which I didn't have on hand. Otherwise, the nutrition profile is perfectly balanced. Love it when things come together like that :) I miss sushi. I miss it HARD. So to fill this void and warm my insides a bit (since its been rainy and cold the past couple days), I had a strong desire to have sushi and miso soup. Let me tell you...the sushi didn't disappoint! It is extremely filling and has versatile flavors that make it a lot more satisfying than the vegetable sushi you can get in restaurants or stores. The miso soup needs a bit of improvement though, so I won't share that yet. I was in a huuuge rush tonight so the salad I also planned to make didn't end up happening, but you can hopefully look forward to seeing a salad with creamy sesame watercress dressing in the near future : ). I love asian food. Drool.
This is the part where I would usually give you the okay to "indulge", but I can't with this recipe! Other than the sodium content that comes with soy sauce... this recipe is super healthy and high in protein! So please, simply enjoy (and watch your sodium intake). And don't forget to vote in my poll to the right! Thanks lovie : ) Ohhhh baby. This is a good introduction to macrobiotics if I've ever had one. (At least I think its macro...fact check anyone?)
I'd like to believe Alicia Silverstone would be proud. I am by no means ready to go macro...but this makes me optimistic. This is a meal that should please any palate that likes asian cuisine (especially sushi). Why you ask? Because the main ingredients is seaweed! I seriously can't get over how good this is dearies...and healthy. Anyone impressed with my presentation skills? No? Okay then, moving on... ; ) Tip of the day: Read through your recipe before you start on it! I often forget to do this. Why? I think I just get too excited. Your dish may or may not turn out tasting fine, but it certainly won't look as pretty! This was a case of a dish that didn't look nearly as good as it tasted. So word to the wise: you can have a delicious AND beautiful meal; just do as I say, not as I do.
I really love this, but if you know me, I am obsessed with many asian things...asian food, asian home decorations...asian cars...asian dogs...ASIA. haha But seriously, here's some legit vegan "takeout" for you! Please don't cringe and change pages simply because this contains brussels sprouts. Let's be honest here; when's the last time you actually tried them?! Were they cooked to a mushy state? I would hate them too. Give them a try, OR if you just can't stomach it, try one of the variations. And fun fact: I always thought it was spelled "brussel" sprouts, however it is actually "Brussels" sprouts. Capital "b" and all! Crazy stuff. Apparently they originated in Brussels...who woulda thunk?! Obviously I need sleep... |
