I keep all interesting recipes I find in the blogosphere "neatly" organized in Word documents that have an alphabetized index and internal links (yeah, I can pretend I'm tech saavy). Whatever strikes my fancy that week (slash whatever I have in the pantry + the "Find" application in Word) usually ends up in my mouth on here shortly thereafter. So it came as a huge surprise to me that I would happen to make/feature two Annie's Eats recipes in a row considering I had never made one of her recipes and she isn't vegan. But it is a very pleasant surprise because I think this has to be my favorite quinoa recipe ever!

I took me a while, but I finally got around to making Carrot Cake Pops! I've seen cake pops all over the food blog world and I was very excited to try them. Although this is a bit of a lengthy process, it's quite easy! And these treats are perfect for Easter. I shared these with my roomate's fiance's bridal shower guests and they got rave reviews. If you have the time, give them a try!
This is the carrot cake recipe I grew up enjoying every year around Easter. I am so excited to be able to share it with all of you now annnd wish my practicum supervisor happy birthday! This simple recipe isn't vegan, but I do hope to make a vegan version someday. In the mean time, enjoy this moist, rich, flavorful carrot cake.
