If you're ever in Colorado Springs, you should definitely eat there. It has a few vegan options which will blow your mind. One of which I have tried to recreate. I won't say this is restaurant quality...but for a meal at home, it's pretty legit!
Sometimes I just can't pass up a good deal at Sunflower Farmers Market. Asparagus was on sale and I have had this recipe on the back of my mind since I first made it the summer but the meal as a whole flopped. This time I left the recipe well enough alone and loved it! It is a great, elegant alternative to leafy green salads. It could almost pass as an entree but I would reccomend at least serving this with a whole grain for more protein and fiber. Enjoy!
