This meal is incredible. With half your daily fiber needs, low fat and sodium, and a generous helping of protein, you can be sure this is a great addition to a healthy vegan diet (or any healthy diet!). I have been longing to make a dish like this since enjoying the fantastic Moroccan Chicken Salad (sans chicken and egg) at California Pizza Kitchen. After taking a looksie through The Kind Diet, I found a couscous dish with a few similar ingredients. To top it all off, I found the most beautiful organic butternut squash at Sunflower Farmers Market and knew I had to do it justice. I suppose this will do ; )
Thaaat's right kids, I'm back in action! Here is the first of many overdue recipes...
This dip has been in my repertoire for years, but this is the first time I've veganized it. The best news? It tastes just as good as the original : ) Since football season is in full swing, I figure this is the right time to be sharing recipes like this: easy to share and easy to prepare (yaaayyy rhyming!). The only downfall is the steep price you may pay for such veganized treats as Tofutti cream cheese and Daiya cheese. Sooorrrryyy, but this is so worth it! It may not be something you want to make every Sunday (please be kind to your wallet and your waistline) but treat yourself when you want to celebrate! I am ashamed to say that my annoying internet problem (Weebly would freeze internet explorer EVERY TIME) was easily solved by using a new browser. Sooooo a long overdue recipe should be here tomorrow!
So sorry! Here's a picture of Brasse to cheer you up : ) Sometimes I just can't pass up a good deal at Sunflower Farmers Market. Asparagus was on sale and I have had this recipe on the back of my mind since I first made it the summer but the meal as a whole flopped. This time I left the recipe well enough alone and loved it! It is a great, elegant alternative to leafy green salads. It could almost pass as an entree but I would reccomend at least serving this with a whole grain for more protein and fiber. Enjoy!
I believe there are a few different names for this style of dessert...I just don't know what they are.
Good story right?! Aaaaanywho. Whatever you may call it, it is freaking delicious. It is also surpisingly low in calories...185 per serving! It pairs wonderfully with a bit of vanilla coconut milk ice cream. Heaven. This is also a suuuper simple weeknight dessert to throw together! So impress your family or roomies tonight : ) Annnnd thats all I got. Just enjoy! Whoooo's feeling like a fiesta?! I must have been tonight because I had my heart set on chips and guac...stuffed poblanos...and mexican brownie pudding. Of course once I finished dinner I was wayyy too full for dessert! This meal is well-rounded and filling and a great alternative to going out for mexican.
This meal is even Mama-approved which hasn't happened in quite a while so that's saying something! Just fair warning: poblanos vary in spiciness...3 out of the 4 I picked were quite spicy, be prepared ; ) PS...things to look forward to: killer gingerbread pumpkin cupcakes, spinach artichoke dip, mexican brownie pudding, ravioli vegetable soup....get excited!!! And please vote in my poll...it wont be up much longer! |
