Carrot Cake Scuffins
1 cup whole wheat flour
1/2 tsp baking power
1/4 tsp sea salt
1.5 tsp pumpkin pie spice (OR: 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger)
2 tbs applesauce
1/2 cup pure maple syrup
1 tsp vanilla extract
Flax egg: 1 tbs ground flax + 3 tbs warm water, set aside for 5 mins
1/2 cup regular oats
1 cup shredded or grated carrots
1/4 cup toasted, chopped walnuts
Directions
Preheat the oven to 350F. Combine flour, baking powder, salt, and spices in a bowl. Then add in applesauce, syrup, vanilla, flax egg, and carrots; mix until combined. Fold in walnuts. Divide dough into 6 equal "scuffins" on a baking sheet lined with parchment. they can be any thap you want, but try to make them all even in height; approx 3/4 to 1 inch. (This is to be sure you scuffin is soft on the inside.)
Makes 6 scuffins.
Store in an airtight container.
