However, they are still a great alternative to regular donuts: all fried and nasty and made with animal products. They're also much lower in calories! I have provided the recipe as I made these donuts...however I would suggest you click on the link below the title and follow those instructions! The only thing I still don't know about is the egg replacer...my recipe came out much runnier than hers (thus the need for extra flour). Try using Ener-G and see if that works.
Sorry this isn't the most hyped up post...but I have to be honest and I promised I would give you guys donuts!
Baked Glazed Donuts
Ingredients
Wet:
1/2 cup almond milk
1 flax egg (1 tbs flax meal + 3 tbs very warm water, set aside for 5 min)
4 tbs (1/2 stick) vegan butter
1/2 tsp apple cider vinegar
1/2 tsp vanilla
Dry:
1 1/2 cups spelt flour
1/2 cup sugar
2 tsp baking powder (I only used 1.5 tsp but I think they would be better with more since I increased the flour)
scant 1/4 tsp nutmeg
1/4 tsp cinnamon
pinch of salt
Glaze:
1 tbs (So Delicious unsweetened) coconut milk (any non-dairy milk will do)
1/2 cup powdered sugar
Directions
Preheat the oven to 350F. Heat wet ingredients in a small saucepan over low heat. Warm the mixture and stir until combined. Make sure it is not too hot to touch.
Enjoy!
