Please don't think this is a healthy breakfast...it is a treat ; )
Banana Chocolate Chip Coffee Cake
Cake:
1/2 cup earth balance (1 stick)
1 cup sugar
3 very ripe bananas
2 flax eggs (2 tbs flax meal + 6 tbs water)
1 cup Tofutti sour cream
1 tsp vanilla
1 tsp baking powder
1 cup all purp. flour
1 cup whole wheat flour
1/4 cup mini vegan chocolate chips (Note: I used regular-sized, but I recommend mini so they are better dispersed)
Topping:
3 tbs turbinado sugar
1 tsp cinnamon
1/4 cup mini chocolate chips
Preheat oven to 350F. Make flax eggs and set aside. Cream earth balance and sugar together. Mash in bananas one at a time.
Serves 12.
