Good story right?! Aaaaanywho. Whatever you may call it, it is freaking delicious.
It is also surpisingly low in calories...185 per serving! It pairs wonderfully with a bit
of vanilla coconut milk ice cream. Heaven.
This is also a suuuper simple weeknight dessert to throw together! So impress your
family or roomies tonight : )

Mexican Brownie Pudding
1/2 cup all purp flour
1/3 cup sugar
1 tbs cocoa powder
1 tsp baking powder
1/2 tsp sea salt
1/2 tsp cinnamon
1/8 tsp cayenne pepper (you can decrease or omit if you're a wimp like my parents...)
1/4 cup non dairy milk (I used plain soy milk)
1 tbs vegetable shortening, melted (coconut oil would probs work too)
1/2 tsp vanilla
1/2 cup brown sugar
2 tbs cocoa powder
1/2 tsp cinnamon
3/4 cup boiling water
Preheat oven to 350F. Grease a 8x8 or 9x9 inch pan. Mix together dry ingredients (flour, sugar, 1 tbs cocoa, baking powder, salt, cinnamon, and cayenne) in a small bowl. Add milk, shortening, and vanilla to dry mixture and mix until smooth and combined. Set aside.
In a separate bowl, combine brown sugar, 2 tbs cocoa, and cinnamon.
Serves 6.
