I am on a mission to incorporate at least 15% protein at every meal. I had struggled a bit with the protein part of the vegan diet, but I have started to plan better! This is a cheap, tasty recipe I first enjoyed in its non-vegan version my sophomore year of college. It is simple, super filling, and absolutely delicious!
So challenge yourself with me if you follow a vegan or vegetarian diet... get at least 15% of your calories from protein at every meal.
Baked Spinach and Bean Burrito
4 sprouted grain tortillas (or other whole-grain varieties)
1 19oz can kidney beans, drained and rinsed
1.5 cups vegetarian refried beans
10 oz frozen spinach
1 cup chunky salsa (my favorite is Frontera Roasted Habanero)
Tofutti sour cream, optional
Vegan cheddar, optional
Preheat the oven to 475F. Grease or line a 13x9 baking dish. Cook spinach according to package directions. As the spinach cooks, drain and rinse the kidney beans.
