1 batch Classic Carrot Cake (I omitted walnuts and raisins for smoother texture)
1/3 cup Cream Cheese Frosting
1.5 lb vanilla/white chocolate candy melts
Lollipop sticks (found at craft stores)
Optional garnishes: coconut, walnuts, cinnamon, food coloring
Bake your cake according to directions and let cool until room temperature, about 1 hour. Prepare frosting.
