Fig and Hazelnut Balls
Prep time: 20 minutes
10 medjool dates
6oz dried figs (the amount in 1 bag)
2/3 cup chopped, toasted hazelnuts
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp salt
1/4 cup unsweetened shredded coconut
1. Toss dates in food processor and pulse until they form a paste. If they don't seem to be coming together, they may be too dry. Add a tablespoon of water and magic ensues...
**If you haven't already, toast hazelnuts at 300F for 8 min
2. Remove date paste and add figs and hazelnuts to food processor. Pulse until they form a pretty fine crumb.
3. Transfer fig mixture to a bowl and toss with cinnamon, nutmeg, and salt. Add date paste and knead everything together.
4. Roll dough into 12 balls. Roll in coconut, and voila! Enjoy :)
