I know I've put a lot of breakfast foods up lately, especially with oats and parfait qualities, but guess what? This is my blog! And I'll post my breakfast if I want to. And the past couple days I have had THE most phenomenal overnight oat parfaits. Ohmygoshyouguys.
the Chocolate Green Monster VOO Parfait (!!!)
1/3 cup oats
1 tbs chia seeds
1 heaping tbs vegan chocolate protein powder
2/3 cup almond milk
1/4 tsp vanilla
dash of cinnamon
1 frozen banana
2 handfuls raw spinach
Chocolate Pecan Butter (made with grain-sweetened/vegan chocolate chips)
Granola of choice
NOTE: This could probably be a tasty Mint Chip parfait if you added peppermint extract to the soft serve : )
Throw all overnight oat ingredients together in a bowl, mix, cover with plastic wrap, and refridgerate overnight.
In the morning, process banana with spinach until smooth.
Layer oats, soft serve, pecan butter (I used a butter knife and "drizzled"), and granola.
