I am a terrible blogger. This is because as a food blogger you are supposed to post holiday recipes before the holidays so your fabulous followers can use your recipes for the upcoming festivities. I do not plan that far ahead, so for that I am sorry. But look at it this way...you will be that much more prepared for next year's meals ;) Tomorrow I will be sharing with you this recipe from OSG. Here's a preview : ) I made these garlic knots last Christmas and again a few nights ago and they continue to be a huge hit with my family. You really can't go wrong with simple yet superb flavors, beautiful presentation, and soft, pull-apart bread. As a side note...I would like to share the view from our living room a couple days ago...we are lucky enough to have a white Christmas. Jealous? Move to Colorado!

This is Christmas in a scone. Seriously.
I know I haven't posted anything in forever...and I know I sound like a broken record, but I'm sorry! Once I got over my bronchitis/pneumonia I went back to my internship 5 days a week, 10-12 hours a day to try and catch up on hours. Theeeen I GRADUATED! So I am finally now able to take a breather and share some fantastic vegan recipes with you. I. am. pumped. Back to the scones...I have never made scones before, but I would consider this a mostly successful attempt! (see my note at the end of the recipe) Cranberries and pears are wonderful winter fruits and this is a great was to showcase them. So snuggle up in your favorite blanket next to the fire, watch the snow fall, and enjoy your scone with some tasty tea. It's Christmas time! Treat yourself. There's this place called The Rabbit Hole. If you're ever in Colorado Springs, you should definitely eat there. It has a few vegan options which will blow your mind. One of which I have tried to recreate. I won't say this is restaurant quality...but for a meal at home, it's pretty legit!

Long time no talk! I am so terribly sorry. As usual, I made two failed attempts at a vegan cheesecake bar...don't ask me what went wrong; I have no clue. They just don't compare to dairy-based cheesecake. And that just won't do. And theeennn I got a terrible, horrible, no good, very bad case of bronchitis. Ten days of painful, hacking coughing...lightheadedness...and shortness or breath so bad they should have stuck me in pulmonary rehab. But I'm all better now other than the occasional bark! And to celebrate I would like to share with you a recipe I have made multiple times, but just recently veganized. These cookies are a little twist on regular snickerdoodles (find that recipe here!). They are less sweet and more rich and creamy. This particular batch tastes a bit graham cracker-y in flavor...but I think that is just because of the almond butter I used, which has a distinct flavor. If you are willing to do the extra work, I would recommend using maple cinnamon almond butter! I just had a fresh cookie with some Silk Nog and it was a divine combination. Yes indeed, 'tis the season dearies! PS: Pleeease do me a favor and comment on this post, it will only take a second! This meal is incredible. With half your daily fiber needs, low fat and sodium, and a generous helping of protein, you can be sure this is a great addition to a healthy vegan diet (or any healthy diet!). I have been longing to make a dish like this since enjoying the fantastic Moroccan Chicken Salad (sans chicken and egg) at California Pizza Kitchen. After taking a looksie through The Kind Diet, I found a couscous dish with a few similar ingredients. To top it all off, I found the most beautiful organic butternut squash at Sunflower Farmers Market and knew I had to do it justice. I suppose this will do ; )
Thaaat's right kids, I'm back in action! Here is the first of many overdue recipes...
This dip has been in my repertoire for years, but this is the first time I've veganized it. The best news? It tastes just as good as the original : ) Since football season is in full swing, I figure this is the right time to be sharing recipes like this: easy to share and easy to prepare (yaaayyy rhyming!). The only downfall is the steep price you may pay for such veganized treats as Tofutti cream cheese and Daiya cheese. Sooorrrryyy, but this is so worth it! It may not be something you want to make every Sunday (please be kind to your wallet and your waistline) but treat yourself when you want to celebrate! Sometimes I just can't pass up a good deal at Sunflower Farmers Market. Asparagus was on sale and I have had this recipe on the back of my mind since I first made it the summer but the meal as a whole flopped. This time I left the recipe well enough alone and loved it! It is a great, elegant alternative to leafy green salads. It could almost pass as an entree but I would reccomend at least serving this with a whole grain for more protein and fiber. Enjoy!
