The challenge isn't over just yet though. I have some tasty meals (and a dessert or two) planned to round out the week. In the spirit of not getting ahead of ourselves, feel free to take a look at my energy intake (MyFitnessPal) and expenditure (DailyMile) for today.
For dinner we will be having Gardein Mandarin Crispy Chick'n stir-fried with broccoli, snap peas, and red bell pepper and Trader Joe's Japanese Style Fried Rice on the side. It's tasty and easy to throw together. The fried rice also makes a great stand-alone lunch and the Gardein chick'n is perfect when I crave Chinese take-out.
I have mentioned the medjool date "frappucinos" multiple times, and today is the day I finally post a recipe! I can't take credit for the idea. I was inspired by a youtuber, Tami Torossian. She's young, super high energy, sometimes sarcastic, and follows a HCLF vegan diet. Click here for her video. My adapted recipe is featured after the break!
Java Chip Frappe
Serves 1.
1 shot of espresso (optional)
filtered water
1/4 tsp vanilla extract
1/3 of a Vega Maca Chocolate Bar, broken into pieces (no I am not sponsored, I just love Vega. Use whatever vegan chocolate you prefer)
ice
1. Toss dates, vanilla, and espresso into a blender cup. Add just enough water (~ 1/2 cup) to cover the dates and blend until combined. The mixture will be frothy.
2. Add in chocolate and as much ice as you can fit in your blender cup (about 10 large cubes for me). Blend just until combined.
3. Garnish with chocolate shavings and enjoy!
