Time to stop apologizing and start getting my butt in gear people! I'll now be living at home with a beautiful, spacious, well-stocked kitchen and I'm sooo excited.
If we're facebook friends, you may have seen that I finally made my mom vegan food that she thoroughly enjoyed! This is groundbreaking. So I had to share this life changing recipe with you. I am a horrible person. I have neglected this blog for over a week (!!) and yet I have gotten the most views ever in my absence (!!!). I promise I have wanted to post something...but I've had a few attempts that fell short recently... #1: Scarlett Orzo with Shaved Asparagus Salad --Orzo didn't fly with this recipe...I'm going to try it again with quinoa #2: Kale Salad with Lemon Tahini Dressing -- Didn't have all the veg I wanted to reeeally make it blog-worthy, but a good lunch nonetheless! #3: No-Bake Chocolate Torte -- According to my mom "not chocolatey enough"; and because I broke the news that it had avocado, everyone could taste it. Lame. I want to remake it and take that flavor down a notch, while enhancing the chocolate. Are you all interested in any of these? Is it worth putting them on here or should I move on? In the mean time..here's a sweet treat I've had up my sleeve for a while now. These chews can serve as a fantastic, filling snack or a nice sweet but light ending to a summer day : ) The realm of raw food dieting is way beyond my reach. I could never go without real baking or meals heated above 120F (or whatevs the limit is) on a cold winter day. During summer however, when a hot kitchen is less than desirable, raw food is perfect. Seee I'm not opposed to the concept, I just don't have the willpower! These raw blondies are a perfect example of an easy, raw summer treat.
The ingredients list is minimal and the preparations are super simple. And the flaaaavors...cashews provide a buttery taste and the combination of salty and sweet is divine. These also make great filling snacks that will give you long lasting energy. Try them out! I'm not a huge chocolate fan, but when I do crave it, you can bet I'll be making these cookies! They have just the right amount of chocolate and an irresistable chewy texture. Plusss, these gems are gluten free!
I have a confession to make. If I could only read one food blog for the rest of my life...it would be Oh She Glows. Angela is so personable, has an effortless way with words, and a gift for baking (and cooking!). I think I have made more vegan recipes from her blog than any other blogs combined. I guess I can add this to my list! What food blog would you choose if you could only read one? Annnd lastly, make sure you vote in the poll to the right, I'll be putting up a new one in a couple days! Thanks : ) Holy yummm you can definitely not tell the difference between these and snickerdoodles made with butter and eggs. They bake perfectly, I seriously think Angela is a genius. I am veering more and more away from non-vegan foods, but I could not resist making these. They are so fun to look at and easy to make! But that's not my main motive...that would be the fact that my bestie who just graduated (!!!) loves Fruity Pebbles. She also loves making Peanut Butter Rice Krispies...so it just made sense. I had to make them as a graduation present.
Hopefully you and your Fruity Pebbles/Rice Krispy-loving friends will enjoy these too! My transition from last semester of undergrad coursework (not including my 15 credit internship in the fall) to working full time was a fast one...and I needed a little time to adjust. I hope your finals went well, and if you graduated...congratulations!
Because I took a bit of long break...I have two recipes for you! The first...a light yet filling summer-y salad jam-packed with protein, fiber, and healthy fats. The second...a dense, indulgent, super sweet cake that is great for a special occasion. Dig in dearies! Alsooo...new poll is up. As always, I appreciate your participation : ) This recipe didn't seem appeal to anyone in my poll last week, however I wont be able to deliver on the baked donuts for a while so I hope you enjoy this! It is definitely going to be one of my go-to desserts this summer.
A small Dairy Queen Cookie Dough Blizzard has 720 calories and 28 grams of fat (14 g saturated). My version has 235 calories and only 7 grams of fat (2 g saturated). The texture of the "soft serve" is almost identical to the real thing, but for way less calories and much more nutritional value! And these raw cookie dough balls are eerily similar to regular cookie dough... without all the guilt and nasty raw eggs. Sooo seriously, I hope you try this and enjoy it as much as I did. These are not your typical brownies. First of all, they're vegan. Second, they are more moist, a bit lighter, and filled with blackberries!
The chocolate flavor isn't overpowering so if you want oodles of chocolate-y goodness, I suggest you add some vegan chocolate chips. I find these are best served warm with some blackberry-banana soft serve (handful frozen blackberries + 1 frozen banana processed with 1 tbs almond milk until smooth). Enjoy this fun, fruity dessert! |
